To deal with each of your questions:
I know I have a lot of OF's but people were letting them slip because they were after SP's and RP's.
What do you think of the three OF prospects?
I like all three of them as prospects. Two questions spring to mind: how much will they contribute this year, and how likely are you to keep them?
With 7 keepers, Bruce is an outside possibility as a keeper, but neither of the other two are. In terms of contributing this year, Milledge has a chance of a 20-20 season, and Bruce will hit when he gets his chance. I'd hang on to both of them for now, but Rasmus doesn't seem to have much of a role to play on your team either this year or as a keeper.
The OF as a whole is very deep for you, and I think you could use one or more of them to address your glaring need:
What about the Starters?
Nothing wrong with the guys you have, but I think you need one more tier 2 starter to be competitive in a 10-teamer. I'd look to trade some of your OF depth - Abreu, for example, could get you a very decent pitcher in return.
What about the Relievers?
Gagne seems very underrated to me this year. Back in the NL, back closing, I think he'll do fine. YOu haven't got any of the elite closers, but what you have is fine. I expect Marmol to be closing as well sooner rather than later.
What about Power? What about Speed?
