Like I would ever write a book with a liberal slant to it.
Within the next few years I will be selling my restaurant. I'll then put out a cookbook with my recipes in it.
I'll give you a sample now with more or less the same ingredients as Mrs. Mookie's creation.
Greek Chicken Rollatini:
Basically it's chicken breast stuffed with spinach and feta cheese.
Spinach:
You can use frozen chopped spinach to make it sompler for you.
Place spinach in a pot.
Add sauteed onions, fresh dill and some greens of choice (chopped up), I use the tops of my Romaine lettuce heads.
Cook over a Medium flame until done.
Let cool, then mix in feta cheese and an egg.
Chicken:
Take one full chicken breast and clean it my cutting out and removing the tendon down the middle and the fat around the edges. You now have 2 cutlets. Filet the 2 cutlets so that you have 4 filets total. I marinate mine in vegetable oil, fresh garlic, salt, pepper and oregano. Tenderize filets with a tenderizing mallet or what ever method you prefer to use.
Now roll the chicken around your spinach and feta mix. Do not overlap the ends of chicken filet as to assure even cooking. Top with fresh garlic, a spinkling of bread crumbs, paprika and fresh Italian parsley.
Evenly space your rollatinis in a sizzle plate or whatever casserole pan you have. Add to the pan white cooking wine, chicken base, a little water and a dash of lemon juice of about a half of fresh squeezed lemon.
Now I cook mine at a higher heat than you should because of reasons involving speed of service. I cook for 15 minutes at 450, but cooking it for 25 minutes at about 350 should work for you. Check on it during cooking to make sure the sauce does not totally reduce. Add water if neccessary.
Serve over rice.
