So where does one draw the line? I'm curious as to what others think.... all of the activities that are listed below are games, but which ones are sports? (if I left something out, let me know and I'll add it in, but I've intentionally left out the more obvious sports).
maybe I should have called it the list of things that I don't think are sports that others might (with one exception... there is one item on the list that I do think is a sport... brownie points to the first person to find it )
Give a man a fish and he'll eat for a day, teach a man to fish and he'll drown because you forgot to teach him to swim.

I think that anything where the winner is determined solely on judging (syncro swimming, figure skating etc.) is not a sport but an athletic activity or artform but not a sport.
Races are sporting activities (speed skating, short track speed skating etc.).
You also listed some games (billiards) that, while they take skill, do not require the athletic ability required to be a sport.
Golf and Horse racing are the only ones I consider a sport from that list.
Sorry, no bowling. I think the people that play bowling at a high level are extremely talented, but I see it more as a game rather than a sport. Correct me if I'm wrong, but there doesn't seem to be much strategy with bowling. You have to be extremely talented to bowl, but everyone does the same thing.

But none on your list would I consider a sport for a human.
Did some reading on this a while back, and apparently the athleticism required to be a jockey is unbelievable...
