I guess that they have a deal. They figure that maybe you'll like the MSN service and also like the MLB.com and become a subscriber.
it just seems like your signing up for a more long term deal, like if you sign up for the 3 months free you have to pay for a year or something. Why would they offer this, wouldnt everyone cancel after 3 months?

They might or they may forget or actually decide to continue with the service.
There is a long thread on this site, several weeks back, that discusses circumvention of the blackout restrictions in depth. It's easy to do and 100% legal.

How is it legal?? Aren't there regulations for the blackouts??

I'm not too sure about it's legaility, but it's definitely easy. I doubt it's legal at all...it's basically hiding your location by masking your IP address.
