What is general stratagy for deep leagues? Pitching early or Hitting early? Punt a catagory? Which one? Start SP's based on matchups? Quantity or quality? Any general tips about deep leagues is appreciated. By deep leagues, I mean leagues with at least 20 teams or a NL only (or AL only) league with at least 10 teams.

Strategy depends on the league settings and overall baseball need. Personally, I aimed at getting hitting in my league this year and still came away with a very good staff (Prior, Colon, Buehrle, Escobar, etc) for a 20 team league.
Other than that - know the closers, know the guys that are next in line, know the guys after that. Go for starters - not possible starters.
But it would be easier to help if you gave us the specifics of your league.
It's hard to predict what will happen until the draft is actually in progress. You never know in which direction it will go. Just be prepared and don't get caught up in any runs on a particular position.
I'd go with about a 50-50 split between hitters and pitcher for the first 6-10 rounds. Bats aren't too hard to find later on, but high quality pitching is.
