Also, what is with the "Maximum games" this year?? I've play free fantasy BB and have never seen this before. If you can only play a position 162-161 times this year, should I not play my bench players on my starter's days off??

I'll try to answer from my perspective. There are a lot of different answers to some of your questions, depending on overall strategy.
1. I assume you meant to ask if you can win with just one player at each position. The answer is certainly yes, but there's more to it than that. I typically try to have as much flexibility as possible on my roster. With the 2 UTIL spots, that helps a lot. It's good to have people that play a few different positions to allow for shuffling the roster on off days or after injuries. For instance, guys like Michael Young qualify at each of the three bases - 1B, 2B, 3B. With flexibility, you have a lot more options to cover the things that come up over the long summer.
2. Experts will tell you that pitchers shouldn't be selected until later int he draft. I've heard lots say that you should draft heavily on offense in the early rounds, especially in shallower leagues. There's a lot more volatility in pitching, and there are more options for quality pitchers later in the draft.
3. The maximum games feature prevents people from loading up on offensive stats by shuffling people in and out of the lineup. Even though each player only plays 162 games, but each also has an average of one game off a week. Played to maximize counting stats, someone could shuffle around his bench to have as many as 20-25 extra games played throughout the course of the season, and that's what Yahoo! is trying to prevent.
4. To answer the question that you didn't ask, I typically use most of my bench for starting pitchers,so that I can use them efficiently to maximize their effectiveness. But always keep an eye on the maximum IP limit. You don't want to run out of innings too early by having used lesser pitchers and then have your best starters on the sidelines for the last few weeks.
