I am in a deep dynasty h2h points league. Pitching is vastly more valued than hitting. We use 1 catcher slot, and I own both Matt Wieters and Carlos Santana. Another owner offered me Dylan Bundy for Carlos Santana. I feel like I lose this one, but I do like Bundy's ceiling. Is this something I should even consider?

I wouldn't do this deal unless you can win a prize for owning every top pitcher drafted from this past June's draft.
Carlos Santana can be a top 5 catcher for a long time, his potential could really land him anywhere from 1-5, but he will at the least be a productive top 10 fantasy starter for his position.
Yes Bundy looks like a future stud, but he is years away from reaching the bigs and if you look at every drafts top half from years past there are far more guys trolling the minors than producing real fantasy numbers in the bigs. In addition to that risk, you already have Moore, Miller, Cole, Bauer Bradley, Skaggs, Jungman, etc. You don't need to roll the dice on another high ceiling guy who project to be top of the rotation.
Grabbing as many high potential guys as you can is fun because you start to dream on each guys potential, but when your banking on guys 2+ years away from the bigs there are just way too many risks. Maybe if you didn't already have every other top 15 pitcher drafted last June then you'd consider looking at the deal, but thats clearly not the case.
That is about how I assessed the offer as well; just needed another opinion. I would lose 3 plus years of elite production from Santana at a thin position, while waiting to see if Bundy reaches his vast potential (which as you stated is a major risk).
Since you have two young, future stud catchers on your roster, I think it does make sense to try and deal one for an upgrade elsewhere. However, I'd be looking for current major league talent or at least a prospect that will be in the bigs very soon if I dealt one of them rather then a guy like Bundy.
