Brilliant thread, MookMaster. ;-D

Newly made kimchi is great. Two month old kimchi that has been out of the fridge for half of that time is not. :-)

6 month old kimchi is the best. Needs time to properly mature.

So can I trust Trader Joe's or Whole Foods to have good kimchi? I doubt any local grocery store in Lincoln has 'real' kimchi.

If you want authentic, you'd probably be best served finding an Asian/Oriental supermarket. There should be a couple around.

Duh. :-D I guess I should have thought of that. I buy my rice from an Asian market. Brain spasm day yesterday.
