Now Perez is trash, but there was a point when he had several great outings and several terrible outings (back in PIT), IMO Sanchez is at that same juncture that Perez was at a few years ago.
I would definitely pick my starts with him. I'd probably bench him against the better offenses in the league, and start him for the average to below-average ones. I agree, when he's off he can get ROCKED.

there is nothing like getting in a draftday argument with one of your league mates about how i think Jonathon Sanchez will be just fine as my #4 starter. and then emailing him the line 8 ip, 3 h, 3 bb, 0 r, 11k!!!!!!!!
the bet however turned to who will be a better fantasy pitcher Sanchez or Kevin Slowey. don't respond to that, though. no need to hijack this thread.
