I'd go with Martin as my first choice, then Doumit as my second choice.

1. Martin: Has the highest ceiling of this group, which is why I'd target him. Even if he doesn't reach it he will likely be the best of the 3.
2. Doumit: Will have to stay healthy and play well, AND have Martin's 2009 be indicative of his true abilities, in order to be the best here. It's possible, but I'd rather have Martin.
3. Bengie: The spectre of a total collapse is always out there at this age for catchers, and last year already represents a decline. He is an incredibly streaky hitter who is burning a great streak in ST right now. Maybe that means nothing but I don't like it. For all the negative buzz around him he's still got good pop for the position and will still get a decent RBI spot in the Giants' order, but there are too many ways he could lose value (didn't even mention the possibility of a time share with Posey at some point). Possibly undervalued, if you wind up with him as a bottom of the barrel option that's not bad at all, but the worst of this group.
