I typically wouldn't draft a catcher until the last couple rounds with 1 C, but with 2 I'd want to make sure I got one of the top 5 or so if you can without over-drafting too much.

agreed...i'd also be tempted to grab a pair of catchers in the 8th-12th ranked area

Depends on how deep the league is. a 10 team league means there'd be options on the wire, and 16 team league would leave you hurting if one were to suck. So a deeper league would lend itself more to that thinking.
In a standard league I'd take one stud catcher, if I didn't get one of the top 4 I'd probably reach for Weiters, and then an end game selection who you can replace off the wire if he doesn't pan out.
Like Ken said, if it's a relatively shallow league (10-12 teams), then I think I'd wait a bit to get that first catcher. In deeper leagues (14 teams and higher), getting a top catcher within the first three rounds (Mauer/V-Mart/McCann) helps such that you're not reaching for a catcher later, worse yet if it's a scrub. Then, you can wait for that second catcher, of whom can be easier to replace through FA/WW.
We start 2 catchers in my 12 team auction league. I generally disregard the position in 1 catcher leagues, but I find it pretty important to get two top 10 options. Having the right tandem at catcher could give you a nice advantage over your league mates.

That's what I try to do. I'm still not going to use a high draft spot but I want to get two decent options.
My strategy doesn't change at all even in 2 catcher leagues. I will not reach for catchers and will just grab 2 weaker options to fill my roster if that is the way the draft goes.
Look at it a step further to examine the logic. Imagine that it is a keeper league in which you keep 3 or 4 players. Would you keep mauer, vmart or mccann if you owned them?
