I think my offense might be a bit weak for an 8 team league, though I think my pitching is relatively strong. What do you guys think?

Now that Payton is out of Colorado, I'm not too sure on him especially in an 8 team. Your pitching is very strong and I bet you can either deal one or find someone better off of free agents to replace payton.
