* 1/2 cup ground allspice berries * 1/2+ cup packed brown sugar * 6 to 8 garlic cloves * 4 to 6 Scotch bonnet peppers * 1 tablespoon ground thyme or 2 tablespoons thyme leaves * 2 bunches escallions (green onions) * 1 teaspoon cinnamon * 1/2 teaspoon nutmeg * Salt and pepper to taste * 2 tablespoons soy sauce to moisten
Place allspice, brown sugar, garlic, scotch bonnet peppers, thyme, scallions, cinnamon, nutmeg, salt, pepper, and soy sauce in a food processor and blend until smooth.
I actually had someone complain that Knapplc's recipe had disappeared. That made me chuckle (no offense to Knapplc's recipes). The other thread had to go away (all complaints should be forwarded to the Head Mod ) but here back by popular demand is, a happy ending for some of you, Knapplc's Jerk recipe.

Jerk spice was created in the Caribbean. It goes well on chicken and pork. Rub it into the meat, let it sit for a minimum of 30 minutes and preferably overnight (refrigerated), then grill.
There's a local burrito joint down the street from my office that makes jerk chicken burritos that will kick your ace.

Here's what I can think of for OSO Burrito's Jerk Chicken burrito recipe:
1 chicken breast, jerked and grilled 1/3 cup rice (rice, lime & cilantro) 1/3 cup black beans, cooked (black beans, minced garlic, salt & minced onion) minced cilantro pico de gallo (diced tomato, onion, poblano, & garlic, with lime and cilantro) more cilantro chipotle sauce (sour cream, buttermilk & crushed dried chipotle peppers) shredded colby jack cheese
Lightly oil the chicken breast. Rub the jerk spice on the chicken, let sit to room temp for about 30 min. Grill the chicken with direct high heat to sear the outside. Dice & set aside. Simmer the beans, garlic, salt and minced onion until the beans just begin to break down, stirring constantly. Prepare the rice as usual, and stir in the lime juice & minced cilantro after the rice finishes cooking. Heat your burrito shell on the hot grill until it just begins to get marked. Pull the shell, add all ingredients, wrap and enjoy.
I'm guessing on their pico recipe but it's pretty simple stuff. I know the ingredients for their chipotle sauce but not the right amounts. They won't tell me the actual recipe, but I'll figure it out soon.
