But I was thinking of offering Carlos Lee and Chris Iannetta for Giovvany Soto and picking up Ken Griffey as an undrafted player?

There's a canyon sized gap between their value. It's lopsided enough to get a veto from me if it happened in my league. Carlos Lee is way more valuable than any catcher.

No--wait What? What is the question? Saunders and Mike Napoli for C.Lee? No do not do that. Also do not even think of the other trade Iannetta and Lee are way better than Soto and Griffey..Stand pat.
