How would you guys approach this? I ask because I'm setting up a league for my fraternity (will hopefully become an annual thing), and most of them are football holdovers. They know a marginal to good amount about baseball, but I'm still afraid that I'm going to destroy them and I don't want it to be unfair/unfun.

I sometimes find myself in the same situation, leagues at work mostly. If you wanted to water things down a bit you might try a simpler format. H2H fantasy points is what I find easiest for first-timers. Plays just like fantasy football, they should like that. Simplest way is weekly lineups. Live scoring is key to keeping interest, it takes often takes too much discipline for a footballer to pay attention for the entire season. ESPN's free product works good.
But even with dumbing it down, you will destroy them. It won't be fair. But it will be fun.
Fairly obvious, but make sure not to add any 'sabermatic cats'. I'd keep it to the standard 5x5 and make it H2H. This way, if anyone wants to go out and pick up a fantasy mag it'll be easy to follow along. You could also let them know ESPN has a fantasy website they could check out.. though you should keep the cafe private

#1.Has to be H2H. Anyone can have a bad week in the finals and lose.
#2. Tell them about the cafe if they want a leg up or help. Will be the most helpful thing you can introduce them to.
#3. Don't go hugely easy on them, because that's just ghey. Offer help to the ones that are struggling.
