I guess my question would be, if vampire blood makes the drinker attracted to the donor, why aren't all the V users acting that way?

That's definitely a "things that make you go hmmm..." question. If they drink Erich's blood, than they should have a connection with him and then Erich would know that, be able to find him/her and find out who is dealing the blood and blah blah blah.
