Right now I'm in 2, both keepers, one mixed, one NL-only.
I could probably stand to add another but I'm generally disinterested in public/anonymous leagues. It's just not as much fun when you're not taking money from friends and co-workers.
I do two, with a maximum of three. It just takes too much time with any more.... even with three it takes a good half hour each morning to swap out starters and guys with their day off and you really don't have the time to research who on the waiver wire is good for your league. Two is really the most I feel good about.
0-3 to 4-3. Worst choke in the history of baseball. Enough said.
I usually just max out a Yahoo ID with 4 teams each for baseball and generally try one midseason league. When I first started playing back when I was 13-14, I had tons of time on my hands and was way too addicted to fantasy baseball so I think I had between 12-15 teams across so many IDs that I can't even remember their names and passwords anymore.
Four is plenty now though, I probably couldn't do more without losing track or neglecting one or two.

I do one with a group of college friends that's a 6 year old keeper league. (10 team H2H)
I do one with my brother and cousins that's a redraft every year. (12 team H2H)
But before I draft for either of those, I do a Yahoo Public (12 team H2H) as simply a "Practice Draft" in order to warm up for the other drafts. I've already had my practice draft this year and this weekend and next are my 2 leagues that I actually care about....okay I'm lying, I care about all 3 of them.

But I will be a substitute drafter this year for my old league...11-team NL-only Roto auction. So, I get the fun of a Draft Day auction, and planning for Roto instead of H2H, without having to spend the time managing a Roto team all season. I prefer H2H for the season but love the auction draft, so I get the best of both worlds this year!

I was trying to get a 16 team league set-up on ESPN with 4 teams per division, but I don't know if I have enough time to coordinate that. If that doesn't work out I'll probably just draft another standard Yahoo league.
I think 4 is a good number, any more than that and it would take some of the fun out of it for me.
