The tough thing about projecting Soto by looking at anything pre-2007 is that he dropped 30 lbs last year. I think Soto will see more ABs than Napoli and will hit for a higher avg, so total stats should naturaly fall in his favor given that he's shown some good pop in his bat.

I'm not really that high on Soto but I'd have to go with him. Napoli has that AVG downside so he has to produce HR's to really bring much value. Napoli also has less secure playtime since the Angels have another viable starting C. To be honest I don't think I'd draft either of them in a standard league, they both seem like #2 C's to me.
