I think there is a large number of ladies whose favorite scent when up close is just the smell of clean skin. So a second shower of the day might be a much better strategy than cologne, and you don't run the risk of putting on too much, putting on a kind she doesn't like, or finding out she's allergic
i never spray into the air, i feel like its wasteful. my key is spraying at the top of my collar and not skin, lasts a lot longer that way. and i go 2 sprays. one up top, one around the waste.

Go to a store and have them spray on cards the colognes you're interested in. They should have a bag of coffee beans, as well; sniff that between sniffing cards, it'll clear the previous scent. Once you've narrowed it down to a couple, make sure and spray your own skin to make the final determination, since your body chemistry will make certain scents smell better/worse. Oh yeah, and remember that when applying cologne, only people that are within your arm's length should be able to smell it. Think it was Demetri Martin who said he thought it was funny that cologne rhymes with alone.
Sounds like you have some experience behind the fragrance counter or know someone who does.
