pardon my ignorance but what exactly happens when a team non-tenders a player? Is there any compensation if he is picked up by another team? If not, how is it any different than waiving them?

Once they are non-tendered they are considered FA. Players that are waived have to go through waivers and if a team picks them up they assume the contract.
