Kimchi rocks. I think it's a great complement to Korean BBQ ribs. Not sure if it's rotten, but I do know it's pickled cabbage (along with other vegetables like bok choy, carrots, and onion) that's been pickled with all different kinds of chili powder. I've had some that's quite mild and good and some that will torch your bloody tongue off, with all spice and not so much flavor. Kimchi in soup is alright. The Koreans have this soup called yukkaejeung (sp?) which is predominantly kimchi with some kind of meat and other vegetables (I think it's KC's avatar) and is served in an earthenware pot to keep it boiling hot.

Anyway, congrats KC. ;-D

It was a way to preserve vegetables in ancient times. They would salt and then add different ingredients to create variety of flavors. Kimchi is very versatile and it is used to make a variety of dishes.

You can make soup out of pretty much anything so why not kimchi?
