Who would come out ahead? Should I try to deal Kim because of his value reaching a high? What about Odalis Perez?

I have had the same questions about Perez myself. He has not played a full MLB season yet. That benefits him and leaves question marks. The question is if he can stay healthy. He has thrown well over 100 pitches per start. However, since he hasn't played in a full season, alot of hitters haven't seen him live and in person. So, he will benefit from the batters having to get used to his stuff.
I agree to shop him with caution. Unless you get an offer that you cannot refuse, ride him out. It should be a great ride with a few bumps.
As for Kim/Smoltz. Both have questions. Kim has the Mantei factor hanging over his head and Smoltz has to prove he can last w/o getting hurt. The Braves like to use him for 2 innings from time to time. I would think that Kim has a slight edge b/c I see the D'Backs getting a few more wins than the Braves.
