I am going to draft all closers and middle relievers and forego starters. Do I have to start a 2 SP or can I just leave those positions blank? If I leave them blank I am assuming that just the players I start - only their stats are counted?

This is correct.Since your SP slots are empty,you'll only accumulate stats for your 2 RPs and 3Ps;everyone else is on the bench.

Assuming this is the right strategy for your league, you might want to target some RP with SP eligibility that can be plugged into those spots.
