Here was my original drafted team:

C M. Barrett
1B D. Lee
2B R. Weeks
3B E. Chávez
SS M. Tejada
OF C. Crisp
OF V. Wells
OF M. Holliday
Util T. Hafner
BN J. Dye
BN M. Jacobs
BN O. Cabrera

Pitching

SP J. Beckett
SP D. Haren
RP B. Lidge
RP M. González
P J. Blanton
P M. Clement
P L. Hernández
BN E. Bedard
BN K. Escobar

I made a couple trades so here's how I look now -

C M. Barrett
1B D. Lee
2B R. Weeks
3B E. Chávez
SS M. Tejada
OF C. Crisp
OF C. Crawford
OF M. Holliday
Util T. Hafner
BN <Empty>
BN <Empty>
BN O. Cabrera

Pitching

SP R. Oswalt
SP J. Beckett
RP B. Lidge
RP M. González
P J. Blanton
P D. Haren
P E. Bedard
BN K. Escobar
BN <Empty>

So I picked up an ace, upgraded an outfield slot (picked up some much needed SB's), and lost two mediocre pitchers and a couple backups. What else do I need? This is a daily roster league - how important is it to have a utility guy that can play multiple positions? Who should I look at?

I think you greatly improved your team especially in stolen bases. You had the homeruns to go out and trade a guy like wells and gained what you really needed. A strong bench is really important in daily roster change leagues due to probable injuries that will occur. Depending on your league size some multi eligible players to look at would be ryan freel, pedro feliz, jay gibbons. some others to look at would be encarnacion, ian kinsler, wily mo pena.

Very solid team throughout. You do not need a multi-position guy on your bench just to have one. In daily leagues, if someone gets hurt you can pick a guy up immediately.

On your bench have the following: a decent back-up OF to play in Holliday's spot when he's away from Coors. Holliday's numbers out of the Rockies are below-average, so have a Brad Wilkerson type to step in (or whatever is on the WW and is a decent 4th OF). Also, might want a back-up 2B for Weeks in case he dips into a slump, he is a young-in.

A set-up guy who can turn closer would be a good idea. Travis Bowyer, Chad Orvella, Fernando Rodney, Baez would be good guys to stick on your bench.
...Boston papers now and then suffer a sharp flurry of arithmetic on this score; indeed, for Williams to have distributed all his hits so they did nobody else any good would constitute a feat of placement unparalleled in the annals of selfishness. -Updike
