I'd hang on to all 3 if possible, but I, too, would drop Carrillo, if necessary. Between Zumaya and Matsu, it depends on how long you're willing to keep Matsu stashed. I think he'll be a dynamite MLB pitcher, but he doesnt become a free agent until 2009, so you might have to carry him for 3 years. Of course, his Japanese club could 'post' him, which would allow MLB clubs to bid on and acquire him, but I dont think they'll post him until at least after the 2007 season. Personally, I plan on trying to draft him in my leagues. He's worth it to me. But if you dont want to tie up a minor league roster spot for 2-3 years, you might want to drop him. Carrillo probably will be in MLB before Matsu.
