The way I do it is with JHymn. It cuts out the restricting codes on your itunes songs. turns them into mp3s.

I don't even use iTunes. I use Winamp with the iPod plugin. I find it alot more convenient and faster as well.

You could also just open up the ipod folder from my computer and allow hidden files to be displayed. Cut and paste them into a folder on your desktop...
Hit play all and it will automatically go into your itunes if you have it set up as your default media player.
