Depends on your needs. Escobar should do well as the Jays' closer, giving you saves and solid peripheral stats. Wolf is a solid starter who relies on control and mixing up his pitches. He made huge strides last year (although you couldn't tell by looking at his won-lost record). He apparently looked very good in his last rehab start, so the injury probably won't hold him back.
In terms of absolute value (if there is such a thing), I'd give a slight edge to Escobar, but this really depends on what your team needs. Anybody else you could drop? Dropping a closer without picking up any return would hurt.
Note: you could probably get both A-Rod and Randy in a trade for Wolf if you happen to have one of his fans in your league - they're among the most fanatic - and entertaining - in the majors.
