In one league i have, i'm looking to offload my starting 1B for pitching. I think this guy has great sleeper value and could have a breakout year, and has looked good in spring training. Obviously it's a big gamble, but considering i have a backup 1B is it a completely insane one?

All the above is true, but I think he has had less than 100, maybe even 80, MLB AB's against lefties. If they give him some AB's throughout the season, he may get a little better, not great but better.
Choi is Ok, but 1B is probably the deepest position this year, so he carries little value unless you are in an NL only or deep mixed league. If your league has OBP or OPS as a category, then he carries more value than he would in a standard 5x5.
